Broiled Dover sole with white wine sauce
Ingredients – serves 4 persons
4 x 160 grams fillet of dover sole
2 tablespoons white wine
3 tablespoons olive oil
Salt & pepper (according to taste)
10 grams seasonal mushrooms (washed and set aside to drain)
2 clove garlic (minced)
Methods
• Marinate fillet of dover sole & season accordingly
• Broiled dover sole over hot pan with olive oil till cooked . Approx. 10 minutes on each side
• Sauteed minced garlic in olive oil till fragrant. Add mushrooms & sauteed till soft
• Season with salt and pepper. Serve with

• 1 cup heavy whipping cream
• 3/4 cup white wine
• 2 tablespoons all-purpose flour
• 1 teaspoon salt
• 1 teaspoon chopped chives

Methods
• In a medium saucepan over medium high heat, combine the cream, wine, flour & salt. Stir all together bring to a boil
• Reduce heat to low and simmer until thickened
• Spoon onto plate with fish & sprinkled with chives
